Leiden-frost effect

You must have observed when you put few drops of water over a highly heated pan then it appears to dance or jump , it is called Leiden-frost effect .
The Leiden-frost effect is a physical phenomenon in which a liquid, in near contact with a mass significantly hotter than the liquid's boiling point, produces an insulating vapor layer keeping that liquid from boiling rapidly.
